Pau Meat Filling by Marcle Kath

 


1. In a large bowl, put in all dry ingredients n water. Mix with spatula. 

Then, mix till well combine with hand. 

2. Pour dough on table top. Knead  till smooth for 10min.  Put inside bowl n cover to rest for 10minutes. 

3. After 10minutes, knead again to release air bubbles by stretching n folding. Roll into a log, cut each piece at abt 50gm.  

4. Fold n pull dough into a ball. Roll each piece into a thin piece, then fill with 1/4 egg n 2 tbsp filling. Pleat to seal n place on a piece of parchment paper. Put all pau into a steaming tray line with steaming cloth. Rest for 45 minutes covered. 

5. After 45 minutes, steam pau over high heat for 15min. Off flame n do not open the cover for 3 minutes. 


The filling. 
Mixed all wet ingredients together. 
**I will put in chopped leak or spring onions n bangkuang.
