1/2 cup butter
1/2 cup castor sugar
1 tbsp condensed milk
1 egg yolk
1/2 tsp vanilla essence
Sifted together ingredients
11/4cup plain flour
1/2 cup cornflour
1/8 tsp salt
1/2 tsp baking powder
For Coating
1 cup crushed cornflakes or Nestum or oats
Method
1. Cream butter and sugar till light and fluffy
2. Add condensed milk and egg yolk. Mix well. Add Vanilla
3.Fold in the sieved flour and form into a soft dough
4. Spoon 1 tbsp abt 16 gm dough with ice cream scoop and place them onto the crushed cornflakes or decorate with cornflakes. Shape them into balls and press lightly, Place them onto a greased baking pan.
5. Bake in a preheated oven at 180/20 mins, then 200/10min till brown depending on individual oven. Or direct 180/30min for power oven.
7. When done, Leave cookies in the oven for 5 minutes to dry up
Place them on a wire rack to cool down, then store in a tight container.
