Ayam Masak Merah
(Red Chillies Chicken)
Marinate 4 chicken drumsticks with little tumeric powder.
Deep fry chicken but not over- cooked.
Transfer chicken onto absorbent paper. Put chicken aside.
Put in oil
Fry cinammon stick, anise star and cardarmons
Add in blended ingredients ( standard amount of dried chillies, garlic, shallots, ginger, lemon grass)
Fry till light brown colour
Add in tomato and chilly sauce. Cook and mix them well
Add in lemon grass
Add in chopped buah keras (a kind of nut that will make the dish creamy)
Put in water to dilute the gravy to help further cooking of chicken
Add a liitle gula melaka (brown hard sugar)
Put in pandan leaves (screwpine leaves)
Add pre-fried chicken into sauce. Add water if mixture thickens to cook chicken further.
Add in a little salt.
When sauce thickens and chicken nicely cooked, dish out and serve.
