Pork Trotter in Sweet and Sour Vinegar

I wanted to cook this dish for years. Due to lots of preparation work from the recipe books, I have delayed it because of too much work.

Eat out for this dish is pricey.As many were teaching me the easiest way to cook this likeable dish, I have made it. Yay!, my hubby said, nice and he requested to add dark soy sauce which I omitted earlier because the black beans are bringing out the nice black colour.

Ingredients:-
Trotter, 1 whole leg chopped into bite sizes, boiled to remove fats and hair. Drain well and dry.Young ginger, 200 gm, removed skin and cut into semi-thin slices or crushed chunks.Melaka sugar, 1/2 piece, chopped finelySalt, 1 tsp5 tbsp Ghee Hiang Sesame OilSweet Vinegar, 21/2 cupsDark Soy Sauce, 1 tbspBlack Beans, 200 gm soaked, oil-free fried and boiled Cooking Method1. Bring a pot of 1500 ml water to boil2. In another sauce pan, heat up sesame oil3. Saute Ginger till fragrant but not browned4. Add in trotters and fry for a while to absord sesame oil and ginger flavours5. Transfer trotters and black beans into pot of boiling water6. Add Vinegar7. Boil for 30 min on high heat and 10 min over low heat (The boiling time will depend on the trotters' texture that you preferred).
