NASI LEMAK ALA SIHAT

This is the fast and easy light nasi lemak dish for the 'health conscious' people. Sorry, the rice finished too fast and has no opportunity to pose to catch a pic to be published here. Will appear if I cook the next. time.

I have only 3 dishes, soft boiled eggs, prawns cucumber sambal garnished with mint leaves and deep fried ikan sardin marinated with pepper and soy sauce.

Rice
Ingredients
2 rice cups of sunwhite rice
3 shallots, chopped
3 slices ginger
A pinch of halba
1 tsp salt
1/2 packet pf fresh coconut milk mixed with water to form 4 cups of thin coconut milk.
2 pandan leaves

Method
Wash rice, drain dry
Put rice, shallots, ginger, halba and salt in a rice cooker.
Mix in coconut milk
Cook rice until dry.
Loosen the grains.
Let it stand for 10 minutes and serve with with your favourite dishes
(You can add more cocunut milk if you wish once it started to get dry)
