Chicken- Curry Chicken

Monday to Friday, what to cook again. Ah!, Easy Curry Chicken because I have not been cooking this dish for my family members for quite some time. With the large size russet potatoes resting in my basket greeting me every morning , I have decided to match my elegant potatoes with my chicken drumsticks and thighs. I match-mated them into easy curry chicken.

Why I say easy is because I already have those ready blended condiments stored in jars in my fridge. Just get ready

3 scoops of meat curry powder,
2 tbsp of shallots,
1 tbsp of garlic,
1 tbsp of lemon grass,
1tbsp of ginger
1/2 tbsp of tumeric root (all blended).
Mixed well with some water.

Heat wok with oil.
Drop in 1 pce of cinnamon bark and saute for a while.
Add in the mixture of curry paste and saute till fragrant.
Add in some chicken granules,
1 tbsp of sugar, mix well and add in chicken pieces.
 Fry for a while to let curry paste penetrate into chicken meat.
Drop in a few chilly padi for spicier taste.
Add in 3 pcs of knotted screwpine leaves
3 pieces of kaffir leaves.


Add in 3 cups of chicken stock (if available), stir to mix well.
Let is simmer for 5 minutes and add in boiled and cut potatoes.
 Cook under low heat for another 10 minutes and my curry chicken is ready.

No belacan, no santan and no all other spices as taught in many recipe books. I censored all for the health of everyone.
 Syiok with white rice, fried french beans, boiled egg and with a cup of ice syrup.
