Noodles- Hakka Noodles

Ingredients:
2 pieces of minced chicken breast fillet, marinated with pepper and chicken granules (washed and removed skin)
10 nos of shredded mushrooms (washed & soaked)
3 larges pieces of shredded wood ear (washed & soaked)
8 pieces of dried hakka noodles (buy from wet or hypermarket)
2 stalks of organic siew pak choy (washed and trimmed away head)

Method

(1) Saute mushroom till brown and fragrant. Add in wood ear and fry for a while. Add in a 1 tsp soy sauce and a dash of white and black pepper. Let it simmer for 20 minutes under low flame. Dish out and set aside.

(2) Saute minced onion and garlic till slightly brown. Add in minced chicken meat and fry them till aroma rises. Add in mushroom water (water used to soak mushroom). Add in 2 cups of hot water. Simmer for 10 minutes. Dish out and set aside.

(3) Boil dried noodles till soft. Sieve and drain dry.

(4) Blance vegetables. Sieve and drain dry.

(5) Divide noodles into 4 bowls. Scoop 2 tbsp of (2) including the sauces onto noodles Stir and mix them well with a pair of fork and chopsticks. Add in 2 tbsp of (1).

(6) Lastly, arrange the vegetables onto noodles.

(7) Stir and mix the noodles with ingredients together. Enjoy with a cup of hot nescafe, tea or hot coffee. Everyone loves it.
