Kuih Ketayap


Batter Ingredients
Water/Pandan Water 4 cups
Wheat Flour 2 cups
Tapioca Flour 2 Tbsp
Oil 4 tbsp
Egg 1 no
Salt 1 tsp

Mixed all together or blend the ingredients.
Sieved to remove lumps.

Method
Heat up pan at lowest heat.
Brush oil on a non-stick pan.
Scoop 1/4 cup of batter on it.
Swirl to make a thin crepe.
Cook till crepe became dried up.
Need not cook both sides.
Repeat the same till batter finished.

Wrapping
Scoop 1/8 cup of coconut filling on each crepe.
Fold once, fold both sides and roll up.

Coconut Fillings ingredients.
2 cups grated fresh coconut
3/4 cup Chopped gula melaka or brown sugar
1/8 cup White sugar
Very little salt

Put all ingredients in a wok/pan at medium flame.
Fry till all ingredients are well combined n fragrant. Dish out n set aside.
